The Health Benefits Of Fish

Summer Garden Fish Tacos

These fish tacos are the meal you want to eat on a hot summer day. Packed with vegetables and protein, these light tacos will leave you with a full belly but also with plenty of energy to get you through the day. The recipe below uses tilapia fillets as the fish of choice, but you could use any fish you prefer.

  1. Grill the corn and pepper. First, lightly oil your grill rack. Remove the husk from one medium ear of sweet corn. Halve one poblano pepper and remove the seeds. Place the corn and pepper on the grill, cover them, and cook over medium heat for about 10 to 12 minutes, or until they are tender. Remember to turn them occasionally and allow them to cool slightly after grilling.
  2. Grill the fish and squash. As the corn and pepper are cooking, sprinkle your four tilapia fillets, of about four ounces each, with salt. Halve one yellow summer squash lengthwise. Start grilling the fish and the squash, covered, over medium heat for between seven and nine minutes, or until the fish begins to flake easily with a fork and the squash is tender. You only need to turn them each once.
  3. Prepare the vegetables. Once the corn is cooked, cut it from the cob and place it in a bowl. Chop your grilled pepper and squash as well and add them in the bowl with the corn. Stir in one chopped heirloom tomato, one-third cup of chopped red onion, three tablespoons of coarsely chopped fresh cilantro, one teaspoon of grated lime zest, and three tablespoons of lime juice.
  4. Construct the tacos. Warm up eight taco shells on the grill. Serve the fish in the warm shells and top with the corn mixture and slices of ripe avocado. Enjoy!
